What to do with turkey leftovers!

In Faro there is a cooking group and they invite the public down to taste. Here is what they made last week and it was delicious.

Bombay Turkey

1/4 c butter
2-3 tsp curry powder
1/2 c chopped onion
3 tbsp flour
1/4 ts salt
dash of pepper
1 1/2 c chicken broth
2 c diced cooked turkey

Melt butter in medium skillet. Add curry heat 2-3 minutes. Add ion and cook until tender but not brown. Blend in flour, salt and pepper until well-combined. Add broth all at once. Cook and stir mixture until comes to a boil. Cook 2 minutes longer. Add turkey, mix well and bring mixture back to boiling. Serve over left over mashed potatoes, rice or pasta!

Yum!

Sadly, the only part I don't like about being invited out to Christmas supper is not having any leftovers the next day! I would die for a turkey sandwich with gravy today. Yummmmm!

I'll send you some turkey. I'll put it in a box and pour some gravy on top and wrap it in duct tape.

Just tell Matt that you are having another craving & this time it's for left over turkey! He'll HAVE to go out, buy the bird, roast it up & build you some kick ass left-over sandwiches! There is POWER in being pregnant girl!!!!!
Oddly enough the word verification is "plead"...hummmmm...must be some kind of sign.....

hahah oh Heather. The day my husband cooks up a turkey... well I just don't think that would ever happen! But I bet he could steal me some leftovers from the neighbours!!

And thanks Deiss! I will be waiting for that to arrive ;p

Thanks for the recipe, always like to find new recipes, especially to do with left overs!!! Just wanted to leave you a quick note to let you know that the goggles we bought for Paige were from MEC - they said that they were for ages 3 and up, but they fit her just fine!
